I’ve finally decided to launch my blog, after months of planning! I thought of writing an article to present myself, but I felt like I should wait until I get at least one visitor on this blog :).
I’m keen on working out, so having a high-protein breakfast is primordial regarding my diet. If you are like me and looking for a high-protein breakfast recipe or simply a balanced breakfast, this avocado, goat cheese, smoked salmon, and soft-boiled egg toast is simple, effortless and most importantly delicious.
Ingredients: for 2 avocado toasts
- Wide pieces of toasts or English muffins
- Cold goat cheese or lightly seared goat cheese
- 1 avocado
- 4 slices of smoked salmon with dill and lemon
- 2 eggs
- 1 teaspoon of virgin olive oil
- Chili flakes
- Cumin (optional or not)
Cooking soft-boiled egg
Boil water in a pot, when the water starts to boil, gently sink the eggs, and time exactly 6 minutes. Once the 6 minutes are completed, stop the cooking of the eggs by replacing the warm water in the pot with cold water directly under the tap. Be careful when shelling each egg since the yolk will be liquid.
Top off the soft-boiled eggs with a little bit of cumin, it will make all the difference!!
Step 1: Generously spread each toast with goat cheese, then drizzle with olive oil and sprinkle with thyme.
Step 2: Slice the avocado, place each half of the avocado on a separate toast (more or less, according to your preference), salt, pepper, and sprinkle with chili flakes.
Step 3: Put two slices of smoked salmon on each toast.
Step 4: Gently place the soft-boiled egg on top before slicing it in the middle. Sprinkle the eggs with cumin for extra flavor, and it’s ready to eat!
